SHATTUCK FFA FALL UPDATE
By: Emmie Swanson

SHATTUCK, OKLAHOMA - Shattuck FFA has focused on food science over the past few weeks through hands-on experiences ranging from poultry processing to pancake flipping. The month of October began with every ag class learning how to process broiler chickens. This was a first for most of the students, but it was all hands on deck from plucking to packaging. Shattuck FFA purchased chicken processing equipment with a Devon Energy grant a few years back, and this was the first time it was utilized by all of the ag students to process a large group of birds. The following week, ag classes geared up for Shattuck Oktoberfest by making 150 lbs of wurst to be served with a large variety of German cuisine. Students used both automatic and hand grinders to mix the pork and beef, while others mixed and added the seasoning recipe. The meat mixture was then moved to the hand powered sausage making machine where it was put into casing. Anyone fortunate enough to attend the Shattuck Oktoberfest and tried the wurst can attest, it was delicious! Although some students have made wurst in class in past years, this is always a favorite and a great learning experience. Students not only learned how to use the various equipment, but also were able to partake in a local tradition, using local recipes. The food focused month culminated in a school-wide pancake and waffle breakfast. What began as a discussion in Mrs. Pool’s computer class about breakfast food favorites, turned into a meal for the entire 5-12th student body. The 8th grade boys' ag class was able to chip in and flip pancakes for the breakfast. Shattuck FFA loves to eat, and any excuse to learn how to make or cook food, is one that is always met with enthusiasm.
